Your slow cooker can be a handy tool on busy days when you need a healthy meal but don't have time to stand by the stove to prepare something. This black bean and pork chop recipe is an easy, one-pot dish that adds salsa for a kick. It is the perfect recipe for a weeknight meal.

Recipe for Black Bean and Salsa Pork Chops
This recipe is a no prep, one pot meal. Rice is added at the very end of the cooking time to complete the dish.
Ingredients:
- 1 (15 ounce) can of Black Beans, juice included
- 4 pork chops
- 3 cups salsa (any brand or flavor - for a less spicy dish use mild salsa)
- 1 cup water
- 1 1/2 cups uncooked white rice
- cooking spray
Directions:
- Spray inside of a slow cooker with cooking spray. This will help the salsa from adhering to the edge of the cooker and burning. (It also aids with clean up). Place pork chops on bottom of cooker. Open the can of beans and pour over the meat. Be sure to include all the juice from the can. Add the salsa and water, and cook over high heat for three and a half hours or on low for seven and a half hours.
- At the end of the allotted time, add the rice. Measure one and one-half cups uncooked white rice, and pour over pork and salsa mixture. Mix the rice into the slow cooker to ensure that it is covered with liquid. Place slow cooker on high for twenty additional minutes.
- At the end of the cooking time, turn slow cooker off and mix well. The pork will be juicy and may fall apart from the bone, so be careful to remove any bone pieces before placing on plates to serve. If you'd like to pair with a vegetable, corn or carrots work well.
